What you need
oz bbq seasoning
Instructions
1 Trim fat and silver skin off top of ribs. 3 Add a binder of choice(bacon grease, mustard, W sauce) and season top and sides generously with BBQ Rub. 2 Leave membrane on bottom intact . 0 Set smoker to 275 degrees and let BBQ rub sweat in while smoker is heating up. 4 Place on smoker and spritz with 1/2 water and 1/2 apple cider vinegar about every hour. 5 When a nice bark is set and internal temp is 160-170, spritz some butcehr paper to make it more pliable and tightly wrap ribs. 6 Place back on smoker until probe tender which should be 201-205 degrees. 7 Rest on counter for about 20-30 min then place wrapped in a towel in a cooler for about 90 min.
