Parmesan Crusted Fried Potato Cakes

What you need

cup grated parmesan cheese
cup ap flour
extra large egg

cup panko breadcrumbs

tsp salt

tsp black pepper

tsp garlic powder

tsp italian seasoning
Instructions
0 In a large bowl add mashed potatoes, 1.5 cups parmesan, flour, and seasonings. 1 Mix well and place in fridge for 30-45 min. 2 In a rimmed container add 1/2 parmesan cheese and panko, combining. 3 Equally scoop out potatoes and pat into a "pancake" shape. Should be around the size of a drink coaster. 4 Firmly press both sides of each cake into panko/parm mixture and set aside. 5 Get your oil heated to medium-low. Cook each potato cake until golden brown on each side. Should be around 5-6 min per side. 6 Allow to cool and enjoy!View original recipe
