Chicken Taquitos

0 Add chicken thighs, seasonings, and chicken broth to a dutch oven or pot.
1 Cover and simmer until shreddable(30-40min)
2 Drain excess liquid, add cream cheese, mont jack, and cilantro.
3 Mix until well combined.
5 Soften corn tortillas by placing in a moist paper towel and in the microwave for around 15-20 sec.
4 Add a desired amount of chicken to each corn tortilla and roll.
6 Add some oil or bacon grease to a pan and fry on each side(seam side down first) until golden brown(2-3 min per side)
7 Season with tajin as soon as you pull them so it sticks easier.
8 If you want the dipping sauce, mix 1/2 cup sour cream, juice from 1/2 lime, tajin, and 1 tbsp hot sauce. Feel free to alter that to desired ratios...
