What you need

cup chicken broth

oz monterey jack

cup sour cream

oz cotija cheese

oz enchilada sauce

oz cheese tortellini

dash salt & pepper

box spice mix
Instructions
0 Season chicken breasts with salt, pepper, and garlic powder after cubing. 1 Add a little oil or bacon grease to pan, Cook on med high heat and set aside. 2 Turn heat to med low. Add enchilada sauce. 3 Add chicken broth, sour cream, and fajita mix. 4 Whisk until smooth. 5 Pour in tortellini and stir until well coated. 6 Put on lid, and bring to a simmer. 7 After about 5 min add chicken in and stir. Put lid back on. 8 After about 5 more min stir again. 9 Now, add cotija cheese if desired and monterrey jack. 10 Turn heat off, place lid on until cheese is melted. Enjoy!View original recipe
