Baked Ziti

What you need

garlic

tsp fresh oregano

tsp onion powder

tsp black peppercorn

tsp garlic powder

tbsp italian seasoning
tbsp virgin olive oil

cup low fat ricotta cheese
oz fresh tomatoes

lb lean ground beef

cup grated parmesan cheese

cup shredded mozzarella
Instructions
In a large bowl, combine crushed tomatos, olive oil, ricotta, and seasonings and stir until smooth. In heavily salted water, cook ziti to al dente per package directions. Brown ground beef, feel free to season with a little salt and pepper if desired. Once cooked through, combine sauce and ground beef. If using block cheese, grate and set aside. When ziti is ready, drain and combine with sauce/ground beef mixture. On a foil lined baking sheet, spreads out pepperonis and bake at 350 for around 10 min. This will render some of the fat so the ziti isn't swimming in grease and it gives a nice texture. In a 9 x 13 casserole dish add a layer of ziti/sauce then cover with half of mozzarella/parm reserving the other half for the top. Repeat for a 2nd layer adding the pepperonis in amongst the cheese on top layer. Cover with foil. Bake in a 375 degree preheated oven for 20 minutes covered. Remove the foil and bake 10 more min.
