Set smoker up for indirect heat bat 275 degrees.
Remove membrane from ribs and seqson with kosher salt.
Let salt sweat in for around 20 min and then cut into individual ribs.
Place on smoker for approx 90 min at 275 degrees. Ribs should be around 170 internal at this point.
While ribs are smoking make your nashville hot rub. You will have some left over for future use.
Also, get some oil or bacon grease heated to 350 degrees.
In batches, fry ribs for approx 3-4 min.
Place in a large bowl and season generously with nashville hot seasoning. Toss until well coated.
Next, add about 1/2 cup hot cooking oil and toss again.
Hit them with a little more seasoning upon plating and serve with dill pickles. Enjoy!
