This is an absolutely amazing game day dip or for any pot luck! If you dont have a smoker, throw it in the slow cooker!

Char corn on grill or in a pan on med high heat. Just need some color on it.
In a large bowl add corn after removing from cob.
Add in remaining ingredients except for the cilantro and cotija cheese.
Stir until uniform consistency and then transfer to a greased cast iron skillet or casserole dish.
Place in oven or on smoker at 275 for around 90 minutes.
Top with cilantro and cotija cheese and enjoy!
