Get grill or smoker heated to 300 degrees for indirect heat.
Remove spine from chickens by cutting along side it with a sharp knife or kitchen shears.
Once spine is removed, turn the chicken over and cut right through the center of the breast plate.
Remove moisture from chickens with a paper towel.
Generously apply BBQ rub of your choice all over the chickens on both sides. If you can get under the skin also apply some there.
Place on indirect heat at 300 degrees.
In a mixing bowl add glaze/bbq sauce, honey, and about a tbsp of BBQ Rub. Whisk together well.
Brush on chicken about every 30 min until thickest part of breast hits 160 internal.
This allows the glaze to caramelize as it cooks adding even more flavor.
Rest chickens for about 10-15 min before enjoying!
